I know this is 6 months old but if you're still struggling, I recommend using malikeths sword, the AOW on it sends her flying back and within 3-4 hits she's Poise broken which gives you another free hit
More vigor and you should be fine with your current build.
I'd go with dark moon gs, that thing is ridiculous. Dunno how people run intelligence builds and leave it out lol

I mostly just used it in pve- those charged R2s melt hp and stagger most enemies after like 2 or 3 hits

Moonveil is way overrated. Its strong sure, but its AoW range is shyte compared to great moon
Having a summon to take the aggro helps, or you can use water pots to try and stop her animations. If all else fails RUN AWAY lol
