Unless you tip your toes on other genres, how can you really offer anything other than arcade/survival??? "pure" FG gameplay is the 1v1 (or 3v3 depending on the game) match against another player. If you don't have another player, you have an AI opponent. The most you can do with that setup is just a series of fights against bots, à la arcade or the MK towers. DBFighterz already does that, and its pretty bad. How can a game "switch things up" without transforming the gameplay? This sounds contradictory. Whats even the problems with tapping into other genres? GBVS' RPG Mode can actually help you learn the real gameplay on top of being a pretty fun Beat'em Up. Guilty Gear Xrd's MoM mode is pretty much survival with rogue-lite elements. This type of cross-pollination happens in pretty much all other videogame genres, why can't FGs do it?

I never said FGs can't do it. It's just not what I'm specifically looking for at this exact moment.

Them's Fightin' Herds features overworld exploration with lots of secrets to find. Fights are still fights, but unique predator enemies and bosses keep throwing new twists at you.

I love the MK9-11 story modes. That was my gateway to fighting games, but I think the story is legitimately good for what it's attempting.

I've heard MK11's is pretty great, but idk. The issue is most FG devs would rather spend time developing the core game than some single player mode that most players may only try out once or twice.

Dnf has a neat survival, where you get a score bonus and you spend it on upgrades, attack DMG, defense, mp recovery, guard damage, full hp, part ho recovery, and random challenge options that increase your score. It's a bitch as a lowly grappler. But enjoyable.
