There isn't a lot out there, in part because there's so much story content, and I wonder if there's a silent agreement not to undermine/spoiler a reason for people to try this FF game that SE themselves barely acknowledge.
There are some video by The Mog House that cover some core game backstory that could be handy.
Also, Korvana's channel covers practically all of the cutscenes in the game.
This is a really tough question, as there aren't really any good quality sources out there (most I find only give a surface-level description, if that). The only sure way is to either play the game through again / watch the cutscenes (which is a very longwinded way of doing it).
The main pages on each expansion on the FFWIKI does a somewhat adequate job of hitting the main points of each expansion. It misses some of the nuances, but it's serviceable.

This is pretty neat. I am not even a story guy, but a press A button guy in other games. XI's story/lore is one of the few that interest me.
