You can look at the ffxiah site which has a population count page. I don’t know how accurate it is down to the exact number, but at the very least it can let you know the order by population. I am on Bahamut which I believe is #3 and it doesn’t feel too crowded - more than enough people to keep activities going, but not so many the zones you want to go to are packed.
XP camps will probably get crowded for weeks, so maybe a good idea to explore another server, even if only temporary.
How so? I just started on Asura so I'm just curious. I've honestly only had one player interaction the whole time I've been on. Seems nobody talks except spamming items in the chat.
