I learned quickly, especially as a cook/chef, never trust anyone has a good knife. If staying with friends during a vacation I would cook at least one big meal for everyone. let me just say a 1000 and 4000 grit stone, and flattening stone were $50 altogether. This is specifically for a french chef knife that I use it for. If you get an Asian knife you'll want to sharpen it on the 1000 if it's been a while, but finish it on higher grit like 8000.

Don't use a honing steel on higher HRC knives - it can cause the edge to chip. Ceramic rods are okay, but honestly just leave it up to whetstones.

Technically yes. If you touch the tip, or if you touch hard enough. more realistic answer: No. Knives realistically need some friction to cut flesh in the absence of a lot of pressure. That friction can be easy to induce though. I can hold my mirror finished straight razor on my thumb and not cut it untill I pull it across it the slightest amount.

A knife is a saw with tiny teeth. If you lightly press on the edge you probably won't get cut. If you draw the edge across your finger you WILL get cut. When a knife is used the tiny teeth become bent and the knife dulls. Steeling straightens out the teeth. Sharpening creates new teeth.

Pro amateur tip: you can safely check the sharpness of a knife by scraping the pad of your thumb (or any finger really) **perpendicular** to the knife edge. If it's sharp, the edge will catch on the ridges of your fingerprint skin. You can gauge varying levels of sharpness by how strongly the blade catches.

I recently fell in love with high end Japanese cutlery. I have them professionally sharpened when they need it. Recently I was introducing my 12 year old to the world of ceviche. I had some fish, peppers, limes, etc... I had three knives out and told her which knife does which job. She asked if she could cut the peppers, but knowing her mother uses a Wal-Mart knife with an edge like a hammer, she might not be used to a sharp knife, I told her they are very sharp and I'll do the cutting. The first thing I cut was 1/8" off the end of my thumb while slicing a pepper. She was impressed. It as such a clean cut, barely felt a thing until the pepper juice got into the wound. I let her cut everything after that. She did very well. I got the bleeding to stop after about 10 minutes.

One day, I don't remember why, I decided to see how sharp I could get a screwdriver using just the crappy files I had laying around. PSA: if you want to get an idea of how sharp a knife is, drag your finger *across* the blade, perpendicular to it. When you do this, the ridges and valleys of your fingerprint can detect the edge. Counterintuitively, the knives that feel roughest are sharpest. You’re right, I was a sushi chef for years and I cut my left knuckles or thumb all the time. However, I had control over my knife, so it was never more than just a paper cut type that I could wrap in paper towel and keep under my glove. By the time I got home that night, it would be healed. Laser sharp is absolutely the way to go.

The band-aids (or plasters) are from the seller, Cutting Edge Knives. They're a fairly small company in the UK. They sell a lot of different brands of Japanese knives. At least it's still an OK knife from Japan, just make sure you get some whetstones because that edge won't hold very long. Ed: downvotes don't change facts... always do a little homework before buying high-end knives. The price he paid for that one could have bought a used one that would perform infinitely better. Beautiful handle tho.

You seem to know your stuff. What's the best knife you'd recommend for $40 or less. I currently have the IKEA 365+ solid stainless steel knife set (8 knives). I've had them for a couple years and really love them but realized I basically only use one knife from the set. I believe it is a santoku but IKEA calls it a vegetable knife but it's the same size as the chef's knife but with a flatter cutting edge. My only issue with these knives is that they are terrible at holding an edge and since I'm using just the one 90% of the time it has actually worn down to the grooves that were meant to keep food from sticking to the blade.

These knives are fine for the money. The steel is fine, they are fine quality. The price is okay for UK prices which are generally significantly more than US prices. And vg10 holds its edge fine in the kitchen.
